Q. What can my spouse and I do to avoid arguing about money these days?

A. The key to keeping the peace is communication – and not the kind that’s at the top of your lungs. Sit down once a week for a ‘money matters meeting’.  Take 45 minutes to talk money. The point of these conversations is not differences, but common goals. So less “You spent $300 on golf shoes!” and more “How can we save $400 more a month for retirement?” (Assigning blame only creates tension.) Tame the emotions by focusing on the facts: Name the goals, and then brainstorm ways to accomplish them. Review progress regularly. If differing spending habits keep getting in the way, consider setting up separate accounts for mad money, so you each have freedom within limits.

Couples’ conversation starters

  • What is my biggest money worry nowadays?
  • What are my top three savings priorities, in order of importance?
  • What am I pleased with about our financial life?
  • Is there anything I want to understand better about our finances or wish that we could investigate together?
  • If we had to cut back on spending, what three areas would I choose? What three would I avoid cutting?
  • Are there any important money tasks I think we have been procrastinating on?

Action Plan

  • Don’t sweat the small stuff: Agree to a dollar amount, say $150 that you can each spend at one time without the other’s okay.

I love having creative friends.  One of my friends, we’ll call her Amy (because that’s her name) is always surprising me with little cute things she’s made – from her son’s homemade birthday party invitations, to halloween cards to a sweet Spring gift, she has definitely mastered the art of making scrapbooking cool and quaint and sweet without being cheesy, or ‘bad-crafty’.

This month, Amy was invited to a friend’s bridal shower.  These friends of hers are like many couples nowadays who have 2 of everything and just don’t need much in the way of traditional wedding gifts.  While my friend is happy to buy off the registry for the wedding gift, she wanted to give something more personal and from the heart for the bridal shower gift.  And, this is what she created…

Do It Yourself Bridal or Baby Shower Gift

Cute, no?  The bucket consists of a bottle of champagne, some home-made notecards and a basil plant.  For each item, Amy made little cards that say the following:

For the champagne – toast often to everything you are grateful for

For the note cards – love notes are cool

For the basil plant – plant things together and watch them grow

and…for the card that she gave the couple she wrote something to the effect of   ”when life gets busy it’s the little things that are easily forgotten and these are a few things we always try to remember”.

This is a great sentiment for the couple getting married or having a child.  We are often so caught up in the daily grind that we forget what got us to this pivotal point in our relationship.  It is always important to slow down and remember how we fell in love with each other.  If a wonderful hand-made gift like this helps to slow you down and toast to each other, or write a love note or two, then I say it’s the perfect gift a person could receive;)

I created this recipe awhile back with the intention of videotaping myself making it – best intentions…I haven’t even had a chance to make it.  So, I’m putting it out there to all of you so you can let me know what you think – and maybe even send in a picture or two.  I swear, I really will get around to making it (and maybe even with a little video) in my spare time – ha ha! 

Without further ado, here’s my recipe – Manja!

Southwest Spicy Chicken Salad

1/2  cup frozen (thawed) or canned kernel corn
1/2  cup ranch dressing
4  boneless skinless chicken breasts (1 1/4 lb)
6  cups bite-size pieces assorted salad greens
1  teaspoon lime juice
1 ½  tablespoons Tapatio or Cholula hot sauce (or to desired spiciness)
1  medium avocado, peeled, pitted and sliced
1/4  cup chopped fresh cilantro
1/4  cup tortilla strips
1/2  cup chopped red onion grilled in olive oil & balsamic vinegar (set aside to cool)
1/2  cup black beans
1/4  cup chopped tomato

1.  Heat coals or gas grill for direct heat.  Grill/Saute red onion in olive oil and balsamic vinegar until soft.

2.  To make dressing, in a small bowl, stir ranch dressing, Tapatio or Cholula hot sauce, lime juice and half of the chopped cilantro with wire whisk until well blended. Measure 1/4 cup dressing for basting chicken; reserve remaining dressing for serving.

3.  Cover and grill chicken over medium heat 15 to 20 minutes, turning and brushing occasionally with 1/4 cup dressing, until juice of chicken is no longer pink when centers of thickest pieces are cut.

4.  Cut chicken into slices. In large bowl, toss salad greens, chicken, cilantro, onion, black beans, tomato and corn; divide among 4 plates. Arrange avocado around each salad. Sprinkle with tortilla strips. Drizzle with reserved dressing.

Do-Ahead
Prepare the dressing a few days ahead, and store it in a covered container in the refrigerator.
Serve With
This salad is perfect for a summer luncheon, potluck, bbq party, after golfing or as a summer family entree.  Serve with cornbread or warm tortillas.

I receive great newsletters from my financial advisor and often pass them on to my friends.  This month’s newsletter I found to be very useful for all you newly engaged nesting couples out there.  The economy has been set on whirlwind speed as of late and at times it seems difficult to keep up and other times, you hardly want to look to see what crazy thing might be happening.  I’m not so old to remember things like the depression, and not so young that I don’t remember my parents and the news talking about all the craziness in the financial markets in the 80′s.  I am exactly the right age where the 90′s dot com bust hit me like a ton of bricks (the company I was working for collapsed after 70 years of financial success) and this recession has certainly kept me on pins and needles.  However, I do still have faith in our stock market (albeit partly because I’m young enough to earn it back) because history shows that the markets will correct themselves and those who stick it out, will be happy they did (at least that’s what I keep telling myself).

Anywho, this month’s newsletter from my financial advisor speaks to the young investor and I thought it worth posting the beginning tidbit as well as a copy of the newsletter itself.  This newsletter is not to considered financial advice from either me or Merril Lynch, but is for informational purposes only.  For a more in-depth analysis of your own financial plan, you should seek out a licensed financial planner who will sit down with you and help you create a plan that works for you.

Letter to a Young Investor

After two market meltdowns over the past decade and the worst financial crisis since the Great Depression, many young investors are understandably wary of the markets.

For young investors uncertain of where to start, or what to do next, we offer some suggestions:

 

Ask Americans where they feel safest and most will say their own home.  However, unintentional injuries in the home result in nearly 21 million medical visits on average each year.*  In fact, falls were the leading cause of unintential injury in the home environment, resulting in an average of 5,961 deaths each year between 1992 and 1999. 

The Home Safety Council has dedicated the month of June as Home Safety Month – to educate and empower both families and businesses to take actions that will make homes safe. “We hope to bring attention to the serious problem of preventable home injuries and its leading causes: slips and falls, poisonings and fires and burns,” says Meri-K Appy, president of the Home Safety Council. “Just a few simple steps can dramatically reduce the dangers in most homes and may even make a lifesaving difference.” Throughout Home Safety Month, the Home Safety Council encourages the public to consider their home’s danger areas and take some simple steps to minimize their risk from potential injuries, or even death.

Prevent Falls

• Have grab bars in the tub and shower.

• Have bright lights over stairs and steps and on landings.

• Have handrails on both sides of the stairs and steps.

• Use a ladder for climbing instead of a stool or furniture.

• Use baby gates at the top and bottom of the stairs, if babies or toddlers live in or visit your home.

 

Prevent Poisonings

• Lock poison, cleaners, medications and all dangerous items in a place where children can’t reach them.

• Keep all cleaners in their original containers. Do not mix them together.

• Use medications carefully. Follow the directions. Use child resistant lids.

• Install carbon monoxide detectors near sleeping areas.

• Call the Poison Control Center at 1-800-222-1222 if someone takes poison. This number will connect you to emergency help in your area.

 

Prevent Fires & Burns

• Have working smoke alarms and hold fire drills. If you build a new home, install fire sprinklers.

• Stay by the stove when cooking, especially when you are frying food.

• Keep space heaters at least three feet away from anything that can burn. Turn them off when you leave the room or go to sleep.

• If you smoke, smoke outside. Use deep ashtrays and put water in them before you empty them. Lock matches and lighters in a place where children can’t reach them.

• Only light candles when an adult is in the room. Blow the candle out if you leave the room or go to sleep.

 

Prevent Choking and Suffocation

• Things that can fit through a toilet paper tube can cause a young child to choke. Keep coins latex balloons and hard round foods, such as peanuts and hard candy out of children’s reach.

• Place children to bed on their backs. Don’t put pillows, comforters or toys in the crib.

• Clip the loops in window cords and place them up high where children can’t get them.

• Read the labels on all toys, especially if they have small parts. Be sure that your child is old enough to play with them.

• Tell children to sit down when they eat and to take small bites.

 

Be Smart Around Water

• Stay within an arm’s length of children in and around water. This includes bathtubs, toilets, pools and spas – even buckets of water.

• Put a fence all the way around your pool or spa.

• Empty large buckets and wading pools after using them. Keep them upside down when not in use.

• Make sure your children always swim with a grownup. No child or adult should swim alone.

• Keep your hot water at or below 120 degrees F to prevent burns. Visit the Home Safety Resource Center at www.homesafetycouncil.org to review and download free information, including posters, brochures, safety checklists and additional tips to help safeguard your family.

Now that I am a grandmother, I appreciate and find myself relating more to the things my mom passed onto me when she was living.  She would write down tips in a small notebook that she had read, like a recipe book, and then she would test them.  Here are a few that I will share with you, because we can never learn too much or have too much help.

  • To deodorize shoes, especially those sports shoes that come home and make a child’s room smell like something has died in there. Place a dryer sheet inside each shoe and leave it there over night. They are also good for the gym bag!
  • Out smart the bugs. Mix equal parts of baking soda and sugar, fill jar lids with the solution and place them in the trouble spots where you see roaches and silver fish.  Next day vacuum up the dead bugs.  Be sure to keep the solution out of reach from children.
  • Taming of the hair, that static electricity that is so annoying…quickly run a dryer sheet over your flyaway hair. I wonder if this also would work for static pants…have to try that.
  • Kill the bacteria, even our underarms can get a smelly bacteria build up. Take a cotton ball and put some alcohol or witch hazel on it and rub it in your armpits. Let it dry. Do this before you put your deodorant on.
  • Ok, you have got to love this one. Wet a dryer sheet and rub it on the shower doors and walls to remove mineral deposits and soap scum.
  • How do the microwave ovens get dirty so fast? Someone is not using covers, but there is help. In a 1 quart microwavable bowl, mix 2 tablespoons of baking soda with 1 cup of water. Zap it in the microwave for 3 minutes. Use a paper towel to wipe off the condensed steam on the walls of the microwave and door. Wipe one more time with a clean damp towel.
  • Before you start sewing, run a needle and the thread through a dryer sheet, it helps keep the thread from tangling.
  • If you wash your own car, make it a bit easier on yourself. Prepare a solution of 1/4 cup baking soda in 1 quart warm water, wait for the baking soda to completely dissolve. Apply to your car with a soft cloth or sponge to remove road grime, tree sap, bugs and tar from car lights, chrome, windows, tires, etc.
  • And last but not least…have a dish that is just caked with baked on food ? Place a dryer sheet in the bottom of the dish, fill it with warm water and let it sit for a few hours. Then it should easily wipe out with a paper towel.

three cheese vegetable quesadilla from glen ivy spa chefOne of my favorite ‘me’ things to do is to go to the spa for a day, specifically, Glen Ivy Day Spa in Corona.  The place is beautiful and serene and just far enough away from home to make me feel like I’m really getting away for the day. 

To top it off, the chef at Glen Ivy conjures up some really yummy food.  They’ve started sharing their recipes and this Three Cheese Vegetable Quesadilla would be a great meal for the kids (and an adult) to make for Mom.  I’ve actually had the quesadillas at the spa and they are delicious!

Three Cheese Vegetable Quesadillas

Ingredients:
1 tablespoon crumbled feta cheese
1 tablespoon crumbled jack cheese
1/4 cup grated mozzarella cheese
1/2 teaspoon extra virgin olive oil
1 seeded and diced chile poblano or pasilla
1 seeded and diced jalapeno
1 garlic clove minced
1/2 tomato, diced
1 chopped green onion
1/2 cup chopped zucchini
1 teaspoon chopped fresh oregano
2 tablespoons chopped fresh cilantro
3 large wrap tortillas (12 inch)
1/2 cup Edamole Broccomole–click here for recipe
1/2 cup Three Chili Salsa–click here for recipe

Step 1: In a mixing bowl, combine the three cheeses, cover and refrigerate until ready to use.

Step 2: Heat a saute pan over medium heat and lightly coat the bottom of the pan with the olive oil. Add the poblano, jalapeno, garlic, tomato, green onion, zucchini and oregano. Saute for 2 minutes. Fold in the cilantro. Remove from heat.

Step 3: Heat a large saute pan over medium high heat and add 1 tortilla. Cook 5 seconds, turn over, and sprinkle 2 tablespoons of the mixed cheeses and 2 tablespoons of sauteed vegetables on one side of the tortilla (in a half moon). Fold the tortilla over the filling and toast on each side for 1-2 minutes or until the cheese has melted. Remove the pas and repeat with remaining tortillas.

Step #4: Cut each quesadilla into 8 pieces. Serve with Edamole Broccomole and Three Chili Salsa. BUEN PROVECHO!

We can all use quick tips in this busy day and age, so we have compiled a few to share and would love to hear some of your own short cuts that your family uses. Some great ones get passed down from family member to family member and it feels like everyone must know these tips already, but not so. So get out there and share. There are always new families just getting started and they will always appreciate a few short cuts.

* Warm up butter faster by grating it first and leaving it out in a bowl to warm up.

*Freeze left over coffee in ice cube trays, “Fred & Friends Cool Beans” ice cube trays make for a fun and quick cup of iced coffee.

*Best way to keep flowers fresh, cut 1/2″ off tips with a sharp knife, change the water daily using cool water and drop an aspirin in the water.

*If you have small children in the house, make mini cup cakes or muffins using paper petit-four cases or the mini cup cake cups from “Bake it Pretty”.  Easy to pop in your mouth and easy for kids to eat, with no waste.

*Masking tape now comes in colors, patterns and is super quick for wrapping up gifts. And the “Reform School” site is darling.

*The back of fabric curtains, a comforter or an area rug is sometimes more interesting that the front. If no hems will show, flip it. Designers do it all the time.

*Here is an easy BBQ starter. Take an empty tin can with a lid and put lighter fluid and briquettes inside. Let it sit overnight so briquettes absorb the lighter fluid and when you are ready to barbecue, so are your briquettes. This is great for camping too!

My grandfather loved pie.  He preferred pie for his birthday than cake and my grandmother was always willing to oblige.  She made some of the best home-made rhubarb pie I have ever tasted.  They had a very large garden (especially for having a home in the ever congested State of California) that I loved to play in as a child.  From fruit trees, to green bean vines to strawberries and even rhubarb.  Our dinner table was always covered in the days pickings, but none more fun and precious than when Nana would make Popop pie.  We’d roll out the crust together and she’d do magical things with the berries and then we’d all sit around waiting and smelling the wonderful aroma of home-made pie.

Recently, while perusing other Mommy blogs, I came across a blog called The Busy Budgeting Mama who has some really cute ideas and posts along with this fabulous idea from Our Best Bites which is a single serving pie in a jar.  It is uber cute and it looks and sounds as delicious as it is cute.  I can imagine these being made as wonderful favors for a wedding, shower or party, or just to have stored in the freezer for something quick and easy to grab for your next potluck or to have on hand when guests stop by.

Earth Day PosterWhat will you be doing to celebrate and support Earth Day? My son and I will be putting together a compost bin and garden boxes. Not only will we be producing excellent fertilizer for my garden box and flowers,  we are also reducing the amount of food and yard waste that ends up in landfills.

My fabulous find…a garden box kit from Lowes.  I hope to build some more garden boxes with the “Suncast Tiered Raised Garden Bed”, that you can buy now at Lowe’s. I also got my easy turn, composter there, and it looks so simple to put together.  But the first thing I did was get a small tin container with a lid from the Container Store to put under my sink for my table scraps. My container is almost full, so I must get my composter put together this weekend, weather permitting.  Boy the scraps sure pile up fast and it makes me see how much we were giving to the landfill instead of nourishing my own garden!

If you want to build your own composter with wood, I suggest using boards that are untreated, but they will only last a couple of years.  In that case, it may be better to look into one of the synthetic raised bed garden kits, they last longer and can be assembled in an afternoon.  However, speaking of Earth Day, we may want to research the environmental impact these have before purchasing???

The secret to successful raised-bed gardening is creating beds that are wide enough to reach across; paths between beds are wide enough to accommodate a wheelbarrow or garden cart, so that you can add compost to the beds over time; and enough garden beds to have a variety of plants and herbs for the number of people in you’re family.

Good food, an apron and a potholder…what do they have in common ? A great party !

Yes, barbecue season is right around the corner, Mothers Day, Memorial Day, Fathers Day, Graduation… they are all coming very soon, along with warm weather and pool parties. So we are here to help you get ready!

I have been on the hunt for some “Different & Delicious” food prep alternatives, “Fun & Festive” outdoor party ideas and “Quick & Easy” projects to make your festivities a hit. Here’s what I have uncovered.

First, Different & Delicious.  Dinner Studio is incredible an incredible dinner delivery service in San Diego and our family doesn’t know how we lived without them for so long.  Delicious, personalized, home-cooked dinners, what more could one ask for?  Once you sign up and start looking around on their site, it won’t be what should we order, it will be how many should we order! And they make it easy with all sorts of incentives and a start up discount.  I know…give, give, give, it’s just eatable  incredible !

Second, Fun & Festive.  Keep it simple, is one of my best tips. Hang some colorful paper lanterns in your trees or umbrella and clip on some cute butterflies and dragonflies. (Check your craft store for these)  Take mason ball jars,  in half of them put candles inside, the other half place a bunch of colorful flowers inside. Place  wood or cork rounds (from craft store) down the center of your table and place the jars on top of each one.  Get big plastic or galvanized tubs (there are some great deals out there) and surround your wine, beer, soda, lemonade…drink of your choice, in festive colored ice cubes. Here’s how you do it: Place a few drops of food coloring into the water before pouring it into the ice trays and stir. Make all different colors of ice or colors that go with your party decorations. You can even get different shaped ice cube trays for more fun.

Third, Quick & Easy project. An ice breaker, if I ever did see one!  A festive barbecue apron and pot holder might just be the thing that tops off the night and has everyone talking and wanting to know where you got such a great apron and pot holder.  When you tell them, ” I made them” their next question will be, mark my words, where did you get such  different and original fabric?  The fabric can take a nice apron to a Wow apron.  Click on our apron and potholder DIY instructions to learn how to make them yourself.  We’ve also listed a great location to find fabric for all your DIY fabric needs!

My girlfriends and I got together for a cookie party and I made them all aprons from this wonderful fabric shop. I went with a retro look and had no trouble finding what I wanted.

What makes an apron too cute for words?  I say, it’s the fabulous fabric. MATERIALS YOU’LL NEED

  • 1 yd. Fabric (for apron)
  • 1/8 yd. Cotton flannel (for pot holder)
  • 1 Pkg. Rick Rack (contrasting color)
  • 1 Pkg. Wide bias tape ( same contrasting color)
  • Thread
  • Scissors
  • Measuring tape
  • Iron

HERE’S WHAT YOU’LL DO FIRST

All pattern pieces are based on fabric that is doubled. See diagram #1 for pattern layout.

  1. Measure and cut a 15″ x 24″ square of fabric, for body of apron. Measure 24″ on folded edge.
  2. Measure and cut out 2 strips of fabric for apron ties, 3″ wide at fold, the width of the fabric.
  3. Measure and cut 2 squares for pockets, 6″ long x 7″ wide, on salvage edge.
  4. Measure and cut out 1 square for pot holders, 7″ wide x 10″ long. Cut open fold.  Same measurements for doubled cotton flannel.

HERE’S HOW TO MAKE IT

Apron:

  1. Pocket;  Diagram #2. Fold down top 1″ to wrong side of material, iron and pin. Pin and sew Rick Rack  horizontally on right side of folded material, 1/2″ down. Fold and iron the other 3 sides  of the pocket 1/4″.
  2. Open the 15″ x 24″ square of material to 1 ply. Diagram #3. Sew pockets to right side of material, 6″ from the top, all the way around the edge of the pockets. Place pockets where you’re hands naturally would go into a pocket.
  3. Also diagram #2. Fold the 15″ x 24″ piece of material in half with right sides together, and sew down each side. Clip corners. Turn inside out and iron.
  4. Diagram #3. Using you’re machines longest stitch, sew a basting stitch 3/8″ from the top edge, leaving a long tail of thread at the end. Pull the top thread carefully, loosely gathering into a slight ruffle.
  5. Diagram #4. Sew one end of the 2 strips together and iron seam open. Iron the strips in half, lengthwise.
  6. With right sides together, center and pin gathered apron to straps  and sew together.
  7. Diagram #5 & 6. Fold and iron straps in half and fold edge of strap over 1/4″. Pin strap together over apron and starting at one end of the strap, top stitch the strap closed, stitching close to the bottom edge.
  8. Diagram #6. Sew Rick Rack horizontally, 2″ from bottom edge, across apron.

Pot Holders:

Makes 2;

  1. Diagram #1. Pin cotton flannel inside of each piece of material to wrong side, stitch close to edge all the way around. Trim flannel close to stitch.
  2. Diagram #2. Pin and sew Rick Rack 2″ from top and bottom, to right side of material.
  3. Diagram #3. Fold material in half with flannel facing in, Rick Rack on outside of material. Iron.
  4. Diagram #4. Open bias tape up and place pot holder inside. Pin and sew wide bias tape all the way around, leaving 3″ of tape at the end, at corner, to loop over and tuck into the last couple stitches to close.

1.  Almonds:  Almonds are one of the most nutritious of all nuts.  Among its many attributes, almonds are a cancer preventative.  They are low in saturated fat and contain calcium and magnesium for strong bones and vitamin E and many other phytochemicals which may help protect against heart disease and many types of cancer.  They also pack 12 percent of your daily allowance of protein in just one ounce.  There are a host of other healthy benefits from lowering your cholesterol to reducing your heart attack risk.  These little beauties can be easily taken on the go and are delicious to boot.

2.  Quinoa (pronounced Keen-Wa):  Although commonly considered a grain, quinoa is actually a relative of leafy green vegetables like beets, spinach and Swiss chard. Unlike wheat or rice (which are low in lysine), Quinoa is one of the few vegetarian sources of complete protein, meaning, like meats, it has all nine of the essential amino acids.  The protein content is very high (between 12-18%). It’s also gluten-free, full of fiber (making it easy to digest), and contains other heart-healthy vitamins.  Quinoa is very low in Cholesterol and Sodium. It is also a good source of Magnesium and Phosphorus, and a very good source of Manganese.

3.  Greek Yogurt:  My husband and I love Greek yogurt.  It’s thick and creamy consistency is such a treat and the fact that it is often better for you than the traditional yogurt we find in our grocery stores, makes it that much ‘sweeter’.  According to Health.com, Yogurt promotes intestinal and vaginal health, improves lactose intolerance, builds stronger bones, enhances immunity, lowers blood pressure, and may even have anticancer and weight-loss effects. In a recent study in the International Journal of Obesity, researchers found that obese adults who ate three servings of fat-free yogurt a day as part of a reduced-calorie diet lost 22% more weight and 61% more body fat than those who just cut calories. A plus for Greek yogurt, in particular, is that it doesn’t give you the sugar overload of what you usually find in U.S. grocery stores. To save on fat and calories, reach for a low-fat version.  Look for Fage Total yogurt at specialty food stores, Whole Foods Market, Wild Oats, or Trader Joe’s. Try it with a drizzle of honey and a handful of walnuts or almonds.

4.  Artichokes:  Artichokes are a delicious way to get nutrients that research shows we typically lack in our diets — fiber, vitamin C, magnesium and potassium.  Digestion-aiding vegetable fiber helps to control cholesterol levels, and the antioxidant (silymarin) level which is higher than red wine or chocoloate, may prevent skin cancer.  Like Almonds, Artichokes contain phytonutrients, or plant compounds that have antioxidant properties and promote human health.

5.  Hard Boiled Egg:  Hard boiled eggs are a good source of Riboflavin, Vitamin B12 and Phosphorus, and a very good source of Protein and Selenium.  However, they are also high in Saturated Fat, and very high in Cholesterol so you’ll want to eat them in moderation or only eat the egg white.  I personally, like to couple my hard boiled egg with an avocado – I call it the quick California omelette.  Eggs are a good source of low-cost high-quality protein, providing 5.5 grams of protein (11.1% of the daily value for protein) in one egg for a caloric cost of only 68 calories.  Another health benefit of eggs is their contribution to the diet as a source of choline. Although our bodies can produce some choline, we cannot make enough to make up for an inadequate supply in our diets, and choline deficiency can also cause deficiency of another B vitamin critically important for health, folic acid.

6.  Avocado:  Avocados provide nearly 20 essential nutrients, including fiber, potassium, Vitamin E, B-vitamins and folic acid. They also act as a “nutrient booster” by enabling the body to absorb more fat-soluble nutrients, such as alpha and beta-carotene and lutein, in foods that are eaten with the fruit. 

7.  Flaxseed:  Whether eating them whole, ground or as oil, flaxseed is an Omega-3 fatty acid powerhouse.  My favorite way to eat them is ground in yogurt, on cereal, or cottage cheese and even used in muffins, pancakes and more.  Flaxseeds are rich in alpha linolenic acid (ALA), an omega-3 fat that is a precursor to the form of omega-3 found in fish oils called eicosapentaenoic acid or EPA. Since the fats are found in their isolated form in flaxseed oil, it is a more concentrated source of ALA than the seeds themselves.  Studies show that pregnant or lactating women who take omega 3 fatty acids may increase their child’s IQ by about six points.  Other oils include canola and fish oil.

8.  Watermelon.  This past summer (and in our recipe database here) we made an amazing watermelon salad.  Make this salad for your next summertime bbq and know that you are providing a salad with more of the heart disease and cancer thwarting antioxidant lycopene than a salad with tomatoes.  This sweet, juicy picnic staple is packed with antioxidant vitamins such as vitamin C and is also a very good source of vitamin A.  It has also been known to reduce the inflammation that contributes to conditions such as asthma, arteriosclerosis, diabetes, colon cancer and arthritis.

9.  Strawberries:  These little berries pack one of heck of a healthy punch.  Touted as having more vitamin C than some citrus fruits, strawberries are also high in fiber, folate, potassium and antioxidants, making them a natural means of reducing the chances of heart disease, high blood pressure and certain cancers.  Strawberries are only 55 calories per one cup serving, and contain 140% of the recommended daily dose of vitamin C for children.

10.  Collard Greens.  These are so fast to make and so good for you.  A one cup serving has 357 mg of calcium whereas one cup of low-fat milk has 290 mg of calcium.  Collards are a good source of soluble fiber, but first and foremost is Collard Greens’ notoriety as a cancer preventative.  They are packed with antioxidants, such as vitamin C, diindolylmethane and sulforaphane as well as lutein, an antioxidant that protects against age-related vision loss and even cataracts.  At only 46 calories for approximately 100 grams, that is a powerhouse indeed.

I LOOOOVE catalogs.  Seriously, they are like window shopping, but so much safer since I have time to back out before spending way too much money.  The number of catalogs I receive drives my husband nutty, but ocassionally he’ll come across one that he knows he shouldn’t throw directly into the recycle bin.  One such catalog came in our mailbox the other day, Plow & Hearth.  I liked everything on the cover which is dangerous from the start.

As spring and summer approach, my itch to start planning lots of outdoor parties at our house kicks into high gear along with my itch to buy things for said parties.  Catalogs are where I can imagine my dream backyard perfectly decorated with every cool and comfortable amenity and every party luxury that would make my home the house where everyone wants to come to for a summertime party.

This concludes my catalog dreaming for the day.  I find that parties and weddings are on my mind 24/7, so no matter where I go or what I’m looking at, my thoughts always tend towards, “how could I use that for a party?”  If you are getting married or about to host a party, try this same method.  You’d be surprised where you find some great inspiration.

I love spring.  It is hands down my favorite time of year.  This year, I am still waiting for it to be a little warmer and hoping that if I keep wearing sundresses, the weather will catch up.  Spring is a time of new beginnings, and fertilility.  Whether by giving birth to a new bouncing baby or a new project or a new, more positive way of thinking, spring is giving birth all around you and symbolizes how you can be starting anew in your own life. 

I think about spring cleaning my home, my garage, and my psyche to make room for the new and wonderful things I am manifesting in my life this year.  I am always a list person, but springtime makes me want to make a list for every little thing.  I am excited to make my goals and lists, begin anew and give birth to my own springtime desires.

We are currently re-landscaping our front yard and it has felt like a long labor, but as it comes together, we are incredibly excited to start spending more family time in our new little sanctuary with friends and family.

This week, my husband will be traveling abroad and while I’m a little scared to be raising my son on my own for the next two weeks, I’m also very excited.  We will get to spend some fun and quality time together.  And, whenever my husband leaves for a day or two, I always want to surprise him by cleaning and organizing at least one room in the house.  You see, he’s a bit of a minimalist and as much as I’d like to be, I am well, not.  Spring cleaning here I come!  I’m not sure if I should tackle my office or my clothes closet first, or if being a single parent for the next two weeks, if I’m being entirely too ambitious.

Along with starting anew with my home, I am also a sucker for committing to get in shape at springtime -after all bathing suit season is just around the corner.  I rarely get caught up in the New Year’s Resolution, but springtime is my wake-up call that I better get back to the gym.

A couple weekends past, we went to Leonesse Winery in Temecula to pick up our wine shipment.  While we were visiting, there was a lovely little craft fair being held and we came across the cutest, retro/vintage, hand-made aprons by The Cottage Seamstress.  Not surprisingly, since I love most things Etsy, they have an Etsy store.

The description on their super cute postcards reads, “Unique aprons from modern to retro for adults, teens, and children!”  I’m fairly certain I want to get one for my son who loves to ‘do dishes’ and get himself fairly wet in the process.  I’ve included some pictures of me with some of the aprons as well as some cute pictures from their etsy store.

All you nesters out there, aren’t you ready to add one or two of these to your new little nest?

So when I got the De-clutter bug this spring after I read my son-in-law’s e-book “A Minimalist Life” byLeo Babauta.  It is a great book to motivate you into decluttering your own life.  I didn’t feel the need to get rid of everything, but did feel inspired to De-clutter ! So…I put out the word for suggestions on places where I could donate all my “stuff” after I De-cluttered, and I got back some great places I thought I would share with you.

I had a bag of old batteries, all different sizes, that I have been adding to for years hanging in my garage, gone.  My next dilemma was all those bags of soaps, shampoos, and lotions brought home from the hotels I stayed at.  I was sure I was  going to use them or put them out for my guests when they stayed over. NOT!  Now I could donate them to my local Woman’s shelter, Faith Mission, or Salvation Army and feel good about it. My son had an old laptop computer he didn’t need any more, we found a place that takes computers for kids who might not have any other way of getting one. Then there were all those stacks of paperback books, and between my son and I, we had a lot!

Sending your treasured items to a good place, makes it so much easier to part with them. So when we found out we could donate to soldiers, we gave and gave. We could also give our old cell phones to a soldiers’ cause.

Ok, what’s next…Oh yes, my pile of reading and regular glasses in the bedroom drawer – out!  And, to a great place I might add.  My 8, yes 8, boxes of clothes donated to a wonderful place.  I am a crafty person so I should say no more, bags and boxes of craft items donated, including, but not limited to, a bag full of real wine corks that I so diligently had saved for some mystery future use.  And then there were the boxes of old greeting cards, new and used, out to someone that can recycle and make use of them.

For things I wanted to keep, I reorganized, got containers and labeled everything.  Even all those games and puzzles that have pieces and parts that always go missing, and boxes that are barely holding together, into plastic containers.

Finally, for everything else, I decided to call a big truck and have them hall it all away! WaLa, a De-cluttered house, where I can actually see what I have in my closet to wear, a clutter free craft room (well almost) so I can create fun DIY projects for you and a clutter free home where I can put my feet up on an ottoman that is free of piles of magazines. M-m-m feels so good!
